We have tested some kayaks and you can actually push the plastic in a little with pressure from your finger. Not these these are solid.

We now use the fishing kayaks for serious fishing in big swells and use them as all round family or touring kayaks. You can fish easily on this tourer as this is what we originaly used. We know because we use them. It is more than possible for a small child with life jacket on to sit in with an adult as long as they can swim.
