Cottage Farm, Jacobstow, Cornwall Traditionally reared Red Ruby Beef delivered fresh to your door Cottage Farm is a small, family-run farm, managed in a very traditional way. We keep Red Rubys, a traditional local breed, well suited to local conditions. So our cattle mature slowly and naturally on our fresh grass, producing meat with excellent marbling, which after correct hanging results in the most tender and flavoursome beef imaginable. We do not use any GM foods
We do not use routine antibiotics
We do not use any growth promoters. Of course, we do not inject water in the meat as is common practice with supermarkets. On the contrary, hanging the meat for 3 weeks reduces the weight, but the flavour and tenderness is greatly improved. And the meat is local, English (Cornish actually) rather then being flown half way around the world, and it is completely natural. Most beef available in shops is from Continental breeds which grow fast and big. To support this rate of growth they need to be fed vast quantities of supplementary fodder, mostly GM based as those are the cheapest. In contrast we keep a local, traditional breed, the Red Ruby cattle, which are well suited to the conditions in Cornwall, do well simply on grass and do not need any supplementary feed. As a result, our meat is beautifully marbled, tender and delicious as well as having an excellent flavour. It is also very pleasing to think what a happy and peaceful lives the animal have lead all their lives: no stress, just open fields of green grass, their idea of heaven! As Hugh Fearnley-Whittingstall says in his River Cottage Meat book: "The Red Ruby cattle have an excellent, mild temperament and are extremely well adapted to unfertilized grazing. Bred to withstand harsh winters, they grow more slowly and have natural ability to put on fat reserves. It is this natural growth pace and natural diet that makes the close-grained, well-marbled meat British beef at its best. They simply produce the best beef I have ever tasted." When our steers reach the optimum weight, to reduce stress we send them to a local abattoir within 4 miles of the farm. After hanging for about 3 weeks, to improve tenderness and flavour, the meat is cut and prepared by a master butcher. Each cut is boned, packed separately and clearly labeled. We aim to slaughter one bullock and as many lambs as are ordered each month. Delivery is normally in the last week of a given month. The meat is packed in a sturdy insulating polystyrene box together with a frozen gel pack to keep the whole box cool during transport. Our express courier will deliver by midday on the date direct to your door. If you are out, the sealed box can be left in a safe place at your house or with neighbours for up to further 12 hours. The meat is ideal for freezing. To give you some idea of the amount of space needed, a 15 kg box of fresh meat will take up about 1 1/2 trays in a standard upright freezer and a 10 kg will fit in one standard tray. The box contains the following: sirloin steaks, fillet steaks, rump steaks, topside roast, silverside roast, rib of beef/ rolled rib, slow roast, brisket, shin, stewing steak and some 3kg of minced beef. We can mince any other cut for you as well, just ask. We think the meat is really special. It is very well trimmed and completely different from supermarket meat. When fried or sauteed, it just browns crisply, as it contains no excess water. The difference is difficult to describe in words but it becomes obvious as soon as you start cooking with it. The mince is a revelation to cook with! We have been complimented many times on the tenderness and flavour of our meat. Delivery Delivery conditions We provide free delivery within the EX22/23 and PL15/32/33/34/35 postcode areas, and reduced price delivery to all PL and TR postcode areas. You can also collect your meat box yourself. Otherwise the p&p charges are as stated, as long as the delivery address is on the mainland and no further North than Glasgow and Edinburgh. Courier charges for the excluded area are too high to make it worthwhile and next day delivery is not guaranteed. By the way, we charge only as much as it actually costs to provide packaging and to send the box via overnight courier - and no more. Delivery is guaranteed by noon.
