Versatility and Controlled Angles
The Lansky Guided Sharpening System is a very flexible guided sharpening system that offers four variable angles that range from, based on a 1" wide blade, 17 degrees (the shallowest) to 30 degrees (the steepest). The four angled choices are: 17, 20, 25 and 30 degrees.
17° ANGLE.
A severe angle only recommended for Super, Scalpel and X-Acto® blades or similar tools. This angle provides an extremely sharp but highly delicate edge.
20° ANGLE.
A commonly used angle for higher grade, quality blades. This angle provides an excellent edge for these types of knives, and is also Ideal for kitchen knives.
25° ANGLE.
The recommended angle for most knives that need a durable, sharp edge. This angle is ideal for hunting and outdoor knives.
30° ANGLE.
An outstanding angle for knives that see the heavy use of cutting cardboard, wire or carpets. This angle is for heavy duty use where the edge will be taking a lot of abuse.
How to Use the Lansky Guided Sharpening System
You should clamp the knife with the Lansky Blade Guide in the centre of the blade for optimum control, when using longer blades. To sharpen, hold the handle of the knife and rest your fingers on the block of the knife blade. Slowly draw the knife from the heel of the blade (near the handle) down the Whetstone towards the tip of the blade.
Make sure that the edge of the blade is in contact with the Whetstone during the whole stroke. This you do by lifting the handle up slightly as you reach the tip of the blade, then turn the knife and blade guide over and repeat the process on the other side of the knife. (See above Photos).
1) ATTACHING KNIFE BLADE: Loosen front locking screw of knife clamp with small coin, screwdriver or your fingernail to accommodate thickness of blade. Attach clamp to back, or spine, of knife blade at the centre of knife blade. Using Coin, or screwdriver, tighten the locking screw to hold knife securely. Lock blade in place by hand, tightening thumb screw on knife clamp. NOTE: For very small blades use the notch in knife clamp. Position regular and oversized blades beyond notch and well into knife clamp. (See above diagram.)
2) ASSEMBLING THE HONE: Place guide rod through hole in hone holder so that rod and holder form a straight line. Using finger pressure only, tighten the screw on hone holder to hold rod securely. Check straightness and alignment with hone against a flat surface (e.g. a table or the storage case of this kit) to be sure rod and honing stone touch fl at surface along entire length. If rod is not level with stone, bend it into alignment using light finger pressure only.
3) SHARPENING PROCEDURE: Before you begin, please note above photo showing how to hold knife clamp and hone safely. Beginning with the Coarse stone, apply a few drops of Lansky honing oil along surface of stone and insert guide rod into angle hole you have selected. The preferred stroke pattern is to start at point A (See above Diagram) and push to B with only enough pressure to make the stone work. Lift the stone and return to C. Hone from C to D and lift to E etc. Always remember to keep the guide rod at bottom of hole to keep a consistent and accurate angle as you sharpen. Next turn the knife and clamp over and repeat using the same angle you used on the first side of the blade. Repeat this process with consecutively finer stones until you achieve the degree of sharpness you are happy with. Keep stones clean/oiled as you work, and maintain the same sharpening angle throughout the sharpening process. You will note, as you sharpen, that the stones will begin to move smoothly. This indicates pores of the stones may be clogging with filings, which reduces effectiveness of the stone. You can prevent this by occasionally wiping the stones with a rag and always when through sharpening. This is the only cleaning necessary.

Lansky in the Kitchen

Each time you sharpen with the Lansky Guided Sharpening System you are only removing, a very small amount of steel thus keeping the edge of the knife thin and the angle maintained.
