CARDOON SEEDS: BOLD, BEAUTIFUL AND DELICIOUS


 

Closely related to the glob artichoke, and just as much of a delicacy, cardoons are grown for their leaves and midribs.  (They are also grown for their truly beautiful thistle-like flowers, which look wonderful in any border or as an architectural plant).

Try cardoon blanched with butter, served cold with a vinaigrette dressing, or par-boiled and dipped in egg and breadcrumbs and served with lemon oil. Recipes also include the Italian bagna cauda, in which strips of cardoon are dipped into a hot creamy sauce of garlic and anchovies, and the French Christmas gratin, where they are baked in a white sauce sprinkled with cheese. 

Sow under glass outside in April, planting out in well-composted trenches in May.  Alternatively, sow straight into the ground in June.  25 seeds.  Full sowing instructions on packet label.
