* Oolong tea has an incredibly high natural concentration of polymerized polyphenols. The leaves from the tea plant are only partially fermented or oxidized. The tea leaves are picked and allowed to ferment. But then the leaves are steamed or "fired" to halt this process before it is complete. The result is that the leaves are a bit darker than the green tea leaves, but not as dark as those of black tea. The flavor of oolong tea varies by the exact type, but generally speaking, they are very aromatic, with a strong but not bitter flavor.

*What’s the difference between your Oolong teas? The main difference is the tea grade; classified according to the tea bush varietal, and the season of harvest, and the cultivation region (much like coffee). *Oolong or Wulong - What’s the difference?    China has adopted the Pinyin system, but Taiwan and Singapore still use Wade Giles. “Oolong” is an example of Wade Giles, and “Wulong” (or more properly “Wu Long”) is the Pinyin spelling. Wulong and Oolong are exactly the same tea. Wulong and Oolong are simply the name given to teas that are Semi-Fermented.

* How to drink Oolong tea?   For best results, drink 2 cups of Oolong tea daily; it does contain a small amount of caffeine, so it is best to drink the tea in the morning or in the afternoon. You can drink the tea, either hot or cold, whichever you may prefer. Place one tea bag in an 8 fl oz cup, add boiling water and let it steep for 3-5 minutes before drinking. Sweeten to taste - we recommend honey! (New scientific research reveals that honey consumption raises antioxidant levels.)
